Breakfast this morning was blueberry and lemon ‘cheesecake’ overnight oats made with homemade lemon curd, a recipe I’ve been working on. It tastes delicious but the texture needs tweaking as it currently looks a little slimey… Nevertheless it worked really well in these oats. Happy Thursday! (at Regent’s Park)
Rainbow Buddha Bowl with with Peanut Butter Hummus. Eating the rainbow means eating all the different colors of different fruits and veggies. And every fruit and vegetable with a different color is giving us a variety of nutrients. Hence eating the rainbow is one method to get as many of those vitamins and minerals as possible. The color of our food can tell us a lot about its nutritional value. Love learning this language.
For the Hummus Dressing I used:
1 cup chickpeas, peeled
3 tbsp Aquafaba
2 cloves of garlic
Juice of a lemon
3 tbsp organic peanut butter from @foodspring
salt to taste
